Ingredients:

  • Get 2 chicken breasts.
  • One package of bacon cubes
  • Have a fresh romaine lettuce.
  • Get 1 cup of bread cubes.
  • You’ll also need 1/2 cup freshly grated Parmesan.
  • Make sure you have 1/2 cup of high quality olive oil.
  • Finely chop 2 cloves of garlic.
  • Squeeze the juice of a fresh lemon.
  • Get 1 tsp Worcestershire sauce.
  • A bunch of chives
  • Do not forget 1 tsp Dijon mustard.
  • Helvetic Barbeque Salt-n-Pepper RUB

Instruction:

  1. Let’s preheat the smoker to 180°C so we can grill the chicken breasts.
  2. Wash the fresh romaine lettuce thoroughly and cut it into two pieces.
  3. Place romaine lettuce halves cut side down on the grill.
  4. Now put the bacon cubes on the grill (we recommend a cast iron pan).
  5. Dip the bread cubes in the olive oil and season them with Helvetic Barbeque Salt-n-Pepper RUB and also place them on the grill until crispy.
  6. Place the romaine lettuce on the grill with the chicken breast fillets until the outer leaves are grilled but not black.
  7. Take the bread cube and romaine lettuce off the grill and put the whole lettuce half on a plate.
  8. For the dressing, we take the high-quality olive oil and mix it with the chopped garlic, lemon juice, Worcestershire sauce and Dijon mustard. Flavor it with Helvetic Barbeque Salt-n-Pepper RUB.
  9. Now we take the chicken breast fillet from the grill (core temperature 65 degrees), let it rest briefly and cut it into strips and place it on the romaine lettuce.
  10. Now we add the crispy bacon cubes, crusty bread cubes and freshly grated Parmesan.
  11. Now chop the chives and sprinkle them over the salad and Pour the delicious dressing over the salad.
  12. Now you’re ready to enjoy the smoky César salad from the smoker!

PS: In the vegi version you can omit the bacon and replace the chicken breast fillet with BBQ tofu.
