Preparation of the smoker:

  • Preheat your smoker to a constant temperature of 110°C.

Phase 1 – Smoking:

  • Place the spare ribs in the smoker with the meat side up.
  • Maintain humidity in the smoker by spraying some apple juice every 30-45 minutes.
  • Smoke the ribs for about 3 hours.

Phase 2 – Steaming:

  • Take the ribs out of the smoker and wrap them in aluminum foil.

  • Put the ribs back in the smoker and let them cook for another 2 hours.
