Dive into the world of BBQ with this classic 3-2-1 spare ribs recipe from the smoker. Seasoned with the exquisite Helvetic Barbeque Sauguet Rub and refined with the Helvetic Barbeque Original Sauce, these ribs are the star of every barbecue party.
Ingredients:
- 2 kg spare ribs
- 4 tablespoons Helvetic Barbeque Sauguet Rub
- 250 ml Helvetic Barbeque Original Sauce
- Apple juice for moisture during smoking
Instruction:
Preparation of the spare ribs:
- Remove the silver skin from the underside of the ribs.
- Apply Helvetic Barbeque Sauguet Rub evenly to both sides of the ribs.
Preparation of the smoker:
- Preheat your smoker to a constant temperature of 110°C.
Phase 1 – Smoking:
- Place the spare ribs in the smoker with the meat side up.
- Maintain humidity in the smoker by spraying some apple juice every 30-45 minutes.
- Smoke the ribs for about 3 hours.
Phase 2 – Steaming:
- Take the ribs out of the smoker and wrap them in aluminum foil.
- Add a little apple juice to the foil before you seal it.
- Put the ribs back in the smoker and let them cook for another 2 hours.
Phase 3 – Glazing:
- Take the ribs out of the foil and coat them with Helvetic Barbeque Original Sauce.
- Put them back in the smoker and let them glaze for another 1 hour.
Serve:
- Take the spare ribs out of the smoker and let them rest for 10 minutes before cutting them into individual ribs and serving.
