Grilled BBQ chicken wings with Greek salad

These grilled BBQ chicken wings, refined with the Sauguaet Rub from Helvetic Barbeque, are perfect for your smoker. With a crispy skin and a juicy interior, they are ideal for any barbecue. Combined with a classic Greek salad without olives, they make a perfect summer dish.

Ingredients for the chicken wings:

  • 1 kg chicken wings
  • 3 tbsp Sauguaet rub
  • 2 tablespoons olive oil

Ingredients for the Greek salad:

  • 200 g cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, sliced into thin rings
  • 1 green bell pepper, diced
  • 150 g feta, cut into cubes
  • 2 tablespoons olive oil
  • 1 tbsp red wine vinegar
  • 1 teaspoon dried oregano
  • Helvetic Barbeque Salt n Pepper Rub

Preparation of the chicken wings:

  1. Marinate: Rub the chicken wings well with the Sauguaet rub and olive oil. Cover and leave to marinate in the fridge for at least 1 hour, or even better overnight.
  2. Prepare the smoker: Preheat the smoker to 110°C. You can use cherry wood or hickory chips to achieve a more intense smoky flavor.
  3. Smoke: Place the chicken wings on the grill and cook for approx. 2 hours at 110°C in the smoker until they have reached an internal temperature of 75°C. Turn the wings occasionally during smoking so that they cook evenly.
  4. Sear: Increase the temperature to 200°C and grill the chicken wings for a further 10 – 20 minutes until the skin is crispy.

Preparation of the Greek salad:

  1. Prepare: Place the cherry tomatoes, cucumber, red onion and green bell pepper in a bowl. Add the feta.
  2. Dressing: Mix the olive oil, red wine vinegar and oregano in a small bowl, season with Helvetic Barbeque Salt n Pepper Rub. Pour over the vegetables and mix well.

Serve the grilled chicken wings with the Greek salad and enjoy immediately.
