Today I have a fantastic recipe for you that is perfect for the warm summer days: grilled salmon with salt-n-pepper rub and a fresh Mediterranean vegetable salad. This dish is not only healthy, but also incredibly tasty and easy to prepare.
Ingredients:
For the salmon:
- 4 salmon fillets
- 2 tbsp Helvetic Barbeque Salt-n-Pepper Rub
- 1 tablespoon olive oil
- Lemon slices to garnish
For the salad:
- 200 g cherry tomatoes, halved
- 1 cucumber, diced
- 1 yellow bell pepper, diced
- 100 g feta cheese, diced
- 2 tablespoons olive oil
- 1 tbsp balsamic vinegar
- Helvetic Barbeque Salt-n-Pepper Rub to taste
Preparation:
- Prepare the salmon:
- Rub the salmon fillets with olive oil and sprinkle generously with the Helvetic Barbeque Salt-n-Pepper Rub.
- Preheat the smoker to 110°C.
- Place the salmon fillets in the smoker and smoke for around 45-60 minutes until they reach a core temperature of 60°C.
- Prepare the salad:
- In a large bowl, mix together the cherry tomatoes, cucumber, bell pepper and feta cheese.
- Add the olive oil and balsamic vinegar, mix well and season with Helvetic Barbeque Salt-n-Pepper Rub.
- Serve:
- Remove the salmon from the smoker and garnish with lemon slices.
- Serve with the fresh vegetable salad.
