BBQ coffee-rubbed ribs with sweet potato fries and bacon-wrapped carrots

Today we’re conjuring up juicy, coffee-rubbed ribs that delight with a sweet and smoky crust, served with crispy sweet potato fries and tender carrots wrapped in bacon. Take your BBQ to the next level with the coffee rub from Helvetic Barbeque!

Ingredients:

For the ribs:

  • 1 rack of pork ribs
  • 3 tbsp coffee rub from Helvetic Barbeque
  • 2 tbsp brown sugar
  • 1 tbsp paprika powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon pepper

For the sweet potato fries:

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 tsp paprika powder
  • Salt and pepper to taste

For the bacon wrapped carrots:

  • 6 medium-sized carrots
  • 12 slices of bacon
  • 2 tbsp maple syrup
  • 1 teaspoon thyme

Preparation:

1. preparation of the ribs:

  1. Remove the silver skin from the back of the ribs.
  2. Mix the coffee rub, brown sugar, paprika powder, garlic powder, onion powder, salt and pepper in a bowl.
  3. Rub the ribs generously with the spice mixture and leave to marinate in the fridge for at least 1 hour, preferably overnight.

2. grill the ribs:

  1. Preheat your barbecue to indirect heat (approx. 110-120°C).
  2. Place the ribs on the grill rack, remove them from the direct heat source and close the lid.
  3. Leave the ribs to cook slowly for approx. 3-4 hours until the meat is tender and pulls away easily from the bone.

3. preparation of the sweet potato fries:

  1. Peel the sweet potatoes and cut them into even strips.
  2. Mix the sweet potato strips with olive oil, paprika powder, salt and pepper.
  3. Bake the sweet potato fries in a preheated oven at 200°C for 25-30 minutes until they are crispy and golden brown.

4. bacon-wrapped carrots:

  1. Peel the carrots and pre-cook them in lightly salted water for 5-7 minutes.
  2. Wrap each carrot in two slices of bacon.
  3. Place the wrapped carrots on a baking tray, brush with maple syrup and sprinkle with thyme.
  4. Bake the carrots in a preheated oven at 200°C for 15-20 minutes until the bacon is crispy.

5 Serve:

  1. Remove the ribs from the grill and leave them to rest briefly.
  2. Cut the ribs into portions and serve with the sweet potato fries and bacon wrapped carrots.
