Ingredients
For the chop in one piece:
- 1 cutlet in one piece (approx. 1.5 kg)
- 3 tablespoons olive oil

- 1 yellow bell pepper, cut into strips
- 1 red onion, sliced into rings
- 2 carrots, sliced

Instructions
- Preparation:
- Preheat your barbecue to a medium to high indirect heat (approx. 180°C).
- Rub the chop in one piece with olive oil and massage in the Sauguaet rub generously. Leave the chop to marinate for about 30 minutes.
- Prepare the grilled vegetables:
- Place the chopped vegetables in a large bowl.
- Mix with olive oil, salt and pepper so that the vegetables are evenly coated.
- Barbecue:
- Place the chop in one piece on the grill rack over indirect heat.
- Place a grill pan or aluminum pan with the prepared vegetables under the chop to catch the delicious gravy.
- Close the grill lid and grill the chop for about 1.5 to 2 hours, or until the core temperature of the meat has reached 70°C. Use a meat thermometer to check the temperature.
- Turn the vegetables occasionally so that they cook evenly and the flavors are well distributed.
- Serve:
- Remove the chop from the grill and leave it to rest for about 10 minutes before slicing.
- Arrange the grilled vegetables on plates and place the chop slices next to them.
Pro Tip:
For a particularly smoky aroma, you can add some soaked wood chips to the grill. These provide an additional flavor kick and make the dish even more aromatic.
