Ingredients:
- 1.5 kg pork belly (without bones and rind)
- 100 g brown sugar
- 100 ml apple cider vinegar

- Salt and freshly ground black pepper
Preparation:
- Preparing the pork belly: Cut the pork belly into equal-sized cubes of around 3-4 cm. This size ensures that the cubes caramelize perfectly during grilling and develop a wonderfully crispy outer layer.
- Seasoning: In a large bowl, combine brown sugar, paprika powder, garlic powder, onion powder, salt and pepper. Toss the pork belly cubes in the spice mixture until they are evenly coated.
- First grilling: Preheat your grill to medium heat and place the seasoned pork belly cubes indirectly on the grill. Grill them for about 2-3 hours, or until they have a deep golden color and a slightly crispy texture.
- Caramelize: Transfer the cubes to an aluminum grill pan. Mix the BBQ sauce with the apple cider vinegar and pour it over the cubes. Make sure that all the cubes are covered with the sauce. Cover the bowl with aluminum foil and place it back on the grill.
- The finale: Leave the cubes to grill for another 1-2 hours until they have reached a nice sticky consistency and an even darker caramelization. Lift the lid occasionally to stir them.
