Apple pie is one of the classic desserts that no recipe collection should be without. But have you ever thought about preparing this traditional delicacy on the smoker? Ingredients:
For the dough:
- 300 g flour
- 200 g cold butter, in cubes
- 100 g sugar
- 1 pinch of salt
- 1 egg
For the filling:
- 6-8 apples (e.g. Boskop or Granny Smith), peeled, cored and grated
- 100 g brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 tbsp lemon juice
- 1 tbsp flour
- 50 g butter, in small pieces
For the topping (optional):
- 50 g almonds or walnuts, roughly chopped
- 1 tbsp brown sugar
- 1 teaspoon cinnamon
Preparation:
1. prepare the dough:
Place the flour, sugar and salt in a bowl. Add the cold butter and work it into the dry ingredients with your hands or a pastry blender until the mixture is crumbly. Add the egg and knead into a smooth dough. Shape the dough into a flat disc, wrap in cling film and leave to rest in the fridge for at least 30 minutes.
2. prepare the filling:
While the dough is resting, peel, core and coarsely grate the apples. Place the grated apples in a large bowl and mix with the brown sugar, cinnamon, nutmeg, lemon juice and flour. This mixture should be well infused so that the flavors combine.
3. prepare the smoker:
Preheat your smoker to a temperature of around 160-180°C (325-350°F). For a special flavor, use woods such as apple or cherry wood, which give the cake a sweet and mild smoky note.
4. roll out and shape the dough:
Roll out the chilled dough on a floured work surface and place it in a greased cake tin. Press the dough firmly around the edges.
5. assemble the cake:
Spread the apple filling evenly over the dough. Sprinkle the pieces of butter on top. If you like, you can sprinkle the topping of chopped nuts, sugar and cinnamon over the filling to give the pie a crispy crust.
6. baking in the smoker:
Place the cake in the smoker and bake for around 45-60 minutes until the apples are soft and the dough has turned a golden brown color. Make sure to open the smoker lid as little as possible to keep the smoky flavor inside.
7. serving:
Leave the apple pie to cool slightly before cutting into it. Serve it warm with a scoop of vanilla ice cream or a dollop of whipped cream – this brings out the smoky flavor particularly well.
