With homemade batter and Sauguaet rub

Fancy a really crispy grilled pizza with homemade spelt dough? Then you’ve come to the right place! With the Sauguaet rub from Helvetic BBQ and fresh spelt dough, you can conjure up an incomparable BBQ pizza that is guaranteed to impress.

Ingredients for the BBQ spelt pizza:

For the spelt pizza dough:

  • 500 g spelt flour (type 630)
  • 300 ml lukewarm water
  • 1 packet of dry yeast or 20 g fresh yeast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 tsp sugar

For the coating:

  • Tomato sauce
  • Mozzarella or a cheese mix of your choice
  • Bacon (or other topping of your choice)
  • Yellow bell pepper, cut into strips
  • Sauguaet Rub from Helvetic BBQ
  • Optional: A drizzle of olive oil and fresh herbs

Instruction:

1. prepare the spelt pizza dough:

  1. Preparing the yeast: In a small bowl, dissolve the yeast with the sugar in a little lukewarm water. Leave to stand for about 5-10 minutes until the yeast starts to foam.
  2. Knead the dough: Place the spelt flour in a large bowl and make a well in the center. Add the yeast mixture, the rest of the water, the olive oil and the salt. Knead everything into a smooth dough. If the dough is too sticky, add a little more flour.
  3. Leave the dough to rise: Cover the dough and leave it to rise in a warm place for about 1-2 hours until it has doubled in size.
  4. Prepare the dough: After rising, knead the dough again briefly on a floured surface and divide into two portions. Roll out each portion thinly, depending on how crispy you like your pizza.

2. prepare the grill:

Preheat your grill to around 250-300°C. If you have a pizza stone, place it on the grill so that it is well preheated.

3. top the pizza:

  1. Sauce and cheese: Spread the tomato sauce on the rolled-out pastry and sprinkle the cheese on top.
  2. Topping: Spread the bacon strips and yellow bell pepper evenly over the pizza. Now comes the most important part: sprinkle the Sauguaet rub generously over the pizza. This rub gives the whole thing the perfect BBQ flavor.

4. barbecue:

Carefully place the pizza on the grill or pizza stone. Close the lid and grill the pizza for around 10-15 minutes until the base is crispy and the cheese is nicely melted. Make sure that the grill does not get too hot so that the pizza bakes evenly.

5 Serve:

Once the pizza is ready, remove it from the grill, leave it to rest briefly and finish with a drizzle of olive oil and fresh herbs to taste.
