Juicy spatchcock chicken with “Sauguaet” rub – a simple recipe for your barbecue

Take your chicken to the next level with our “Sauguaet” rub. This recipe is simple but full of flavor and is sure to be a hit with your guests. Let’s get started right away!
Ingredients:
- 1 whole chicken (approx. 1.5 kg)
- 3-4 tablespoons Helvetic BBQ “Sauguaet” Rub
- 2 tablespoons olive oil
- A squeeze of lemon juice (optional)
- A little fresh parsley to garnish
Preparation:
- Prepare the chicken spatchcock style: To prepare the spatchcock style chicken, you must first remove the backbone of the chicken. Place the chicken breast side down and use poultry shears to cut along both sides of the backbone and remove it. Then turn the chicken over and press it flat so that it cooks evenly.
- Apply the rub: Rub the flattened chicken with olive oil. This ensures that the rub adheres well. Then apply the Sauguaet rub generously – not only on the skin, but also underneath to really intensify the flavor.
- Optional: A squeeze of lemon juice can give the chicken a fresh, citrusy note that complements the spices in the rub perfectly.
Barbecue:
- Preparing the grill: Preheat your grill to around 180°C. If you have a smoker, now would be the perfect time to add wood chips to give the chicken a pleasant smoky aroma.
- Grill the spatchcock chicken: Place the chicken skin side up on the grill. Grill over indirect heat for about 45-60 minutes. The core temperature of the chicken should be 75°C to ensure that it is cooked through.
- Resting phase: Leave the chicken to rest for about 10 minutes after grilling so that the juices can distribute throughout the meat. This makes the chicken particularly juicy.
Serve:
Cut the spatchcock chicken into portions and garnish with some fresh parsley. Serve with your favorite side dishes such as a fresh salad, grilled vegetables or crusty bread.
