Birkenhof in Urmein (Graubünden) stands for regional quality, animal welfare and enthusiasm for one of the most exclusive cattle breeds in the world. Markus and Martina Dönz are the second generation to run the family business and have become pioneers in Swiss Wagyu breeding in recent years. From Natura-Beef to Wagyu breeding
The farm was long known for its Natura-Beef cattle until 2018, when the Dönz family took the step of buying four purebred Wagyu animals and embarking on the complex breeding process. Wagyu cattle grow more slowly than conventional breeds; it is only from the second year of life that the feed is adapted with the farm’s own grain and corn so that the characteristic intramuscular fat is stored. This patience is essential for the famous marbling of Wagyu steaks.
Species-appropriate husbandry in an alpine environment
At Birkenhof, the focus is on animal welfare and naturalness. The Wagyu cattle spend the summer on alpine pastures up to an altitude of 2,400 meters; in winter they enjoy spacious open stables with a run. Being close to the animals means that every mood can be recognized and the needs of the herd can be addressed individually. The Dönz also keep Grisons black-nosed sheep and black Alpine pigs, which are kept outside all year round and are also slaughtered close to the farm.
Feeding and meat quality
The fine-fibered structure and unmistakable aroma of Wagyu meat are the result of a balanced diet and plenty of time. The animals are fed grass, hay and, in their second year of life, the farm’s own grain and maize. Only after around 30 months have they developed enough intramuscular fat to turn the muscle meat into a butter-soft steak. The result is meat that impresses with its fine marbling and low melting point.
Sustainable processing
Markus and Martina Dönz slaughter the animals on the farm so that they do not experience any stress. Short transportation routes and a quiet environment ensure the highest quality. The cuts are then matured in the cold room until they have reached the ideal taste. In addition to fine cuts, the family also sells sausages, burgers and other “nose-to-tail” products.
Commitment to the Wagyu community
Through his presidency of the Swiss Wagyu Breeding Association, Markus Dönz supports other farms that are interested in breeding. He is committed to genetic diversity, high standards in animal husbandry and exchanges between members.
