Today I’m showing you a recipe straight from the smoker that you won’t forget in a hurry: tender flank steak, aromatic chimichurri sauce and crispy BBQ potato wedges. All smoked slowly, just like a real BBQ moment should be.

And the best thing? You don’t need half a butcher’s shop or a Michelin-starred kitchen – just good meat, the right spices and, of course, your smoker. So, let’s get started!

Meat is king – preferably from a quality Swiss supplier

For this recipe, you need a really nice piece of flank steak – beautifully marbled, freshly cut and full of flavor. I recommend ordering the meat from this trustworthy Swiss supplier. Quality you can rely on.

Season like a pro – but with style, please

A good steak doesn’t need much – but the little has to be right. I like to use the high-quality spices from word of honor. Moments of pleasure . They add just the right kick without overpowering the meat. The smoked paprika or chili flakes in particular are absolute game changers at the BBQ!

Everything from the smoker – here’s how to do it step by step

1. prepare the flank steak

Rub 800-1000 g flank steak with a little olive oil. Season with salt, pepper, paprika & garlic granules. Preheat the smoker to 110 °C – preferably with cherry or mesquite wood for a nice smoky flavor. Smoke the meat indirectly until it has reached a core temperature of approx. 54 °C (medium rare). Then sear for roasted flavors – either directly on the grill or on a cast iron plate.

2. prepare the chimichurri

Finely chop a bunch of parsley, 4 cloves of garlic and a red chili pepper. Mix with 2 tbsp red wine vinegar, 100 ml olive oil, salt & pepper. Leave to infuse – the longer, the better.

3. BBQ potato wedges

Cut 600 g small potatoes into quarters, mix with olive oil, paprika, rosemary, salt & pepper. Cook in a grill tray on the smoker at 160 °C for approx. 45 minutes.

4. build a sandwich

Toast the sourdough bread on the grill. Top with rocket, cut the steak into slices and place on top. Drizzle generously with chimichurri – your BBQ dream is ready!
