Pinte’s Al Capone Burger


The Pinte in Andermatt has taken the classic burger to a new level. The Al Capone Burger and we have taken it apart for you and created a recipe for you to recreate.

Ingredients:

For the burger patties:

  • 500 g minced beef
  • 70g Helvetic Barbeque Salt-n-Pepper spice mix
  • Wholemeal burger buns

For the caprese salad topping:

  • 2 tomatoes, sliced
  • Mozzarella balls
  • Fresh rocket
  • Olive oil
  • Balsamic glaze

For the pesto sauce:

  • 1 cup fresh basil
  • 2 garlic cloves
  • 1/4 cup roasted pine nuts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil

Instruction:

  1. Prepare the burger patties: Mix the minced beef with the Helvetic Barbeque Salt-n-Pepper seasoning mix.
  2. Prepare the smoker: Preheat your smoker to a temperature of 150-160 degrees Celsius and add charcoal or wood chips for the smoky flavor.
  3. Grill the burgers: Place the burger patties on the grid of the smoker and grill them for about 20-25 minutes until they reach the desired doneness.
  4. While the burgers are grilling, prepare the caprese salad topping: Layer the tomatoes, mozzarella balls and fresh rocket alternately on a plate. Drizzle everything generously with olive oil and balsamic glaze.
  5. Prepare the pesto sauce: Blend the basil, garlic, toasted pine nuts, grated Parmesan cheese and olive oil in a blender or food processor until you have a smooth sauce.
  6. Assemble the burgers: Cut open the burger buns, place a burger patty on each and spread the pesto sauce generously. Top with the prepared Caprese salad topping.
