Smoked rösti with sausage and onion sauce – a Swiss classic

Let yourself be whisked away into a world of smoky indulgence with our recipe for “Smoke-kissed rösti with sausage and onion sauce”. Ingredients:

  • 4 large waxy potatoes
  • 1 tbsp salt & pepper rub from Helvetic Barbeque
  • 4 sausages, preferably a type that is suitable for smoking
  • 2 large onions, finely diced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 500 ml beef or vegetable stock
  • 3 tbsp tomato puree
  • A hint of smoked paprika

Preparation:

  1. Prepare the rösti: Peel and coarsely grate the potatoes. Mix with the Salt & Pepper Rub from Helvetic Barbeque and spread evenly in a fireproof dish.
  2. Prepare the smoker: Preheat the smoker to a constant temperature of 200 degrees Celsius.
  3. Rösti: Place the rösti in the smoker and grill for approx. 30 minutes until the surface is golden brown and crispy.
  4. Sausages: Place the sausages next to the rösti in the smoker and grill until the surface is golden brown and crispy.
  5. Prepare the onion sauce: Melt the butter in a cast iron pan. Sauté the onions until translucent, dust with flour, pour in the stock, add the tomato purée and cook, stirring occasionally, to a thick sauce. Season to taste with salt & pepper rub from Helvetic Barbeque and smoked paprika.

Serve the smoky rösti with the sausage and top with the savory onion sauce. This dish is a tribute to traditional Swiss cuisine and at the same time an ode to the art of BBQ.
