Grilled eggplant with tomato sauce and mozzarella balls

  1. Cut the eggplant in a check pattern: Cut the eggplant in half lengthways and cut the cut surface in a check pattern with a sharp knife without cutting through the skin.
  2. Brush with oil: Lightly brush the sliced eggplant with olive oil.
